TILAPIA IN GARLIC BUTTER SAUCE

This dish is so simple to prepare and yet so delicious. With only 6 ingredients, it’s easy enough to make on a busy night during the week.

Serves 4

Ingredients

2 tablespoons butter

1 small onion, diced

2 cloves garlic, minced

1⁄2 cup nonfat plain Greek yogurt

1 tablespoon fresh lemon juice

1 pound tilapia filets

Fresh parsley, for garnish

Preheat the oven to 350°F.

Cook the butter, onion, and garlic in a small skillet for 3–4 minutes over medium heat until translucent.

Place half of the butter mixture in the bottom of a 9 × 13 casserole dish and spread it around evenly.

Pour the other half of the butter mixture into a small bowl. Stir in the Greek yogurt and lemon juice and mix well.

Place the tilapia filets in the casserole dish on top of the butter mixture.

With a large spoon or spatula, spread the Greek yogurt mixture on top of the filets. Bake for 30 minutes until the edges are brown and the fish flakes with a fork. Garnish with fresh parsley if desired. Serve immediately.
